Keeping turf on slopes is tricky because water runs off before it can soak in, and loose soil just slides away. You really need deep-rooted grasses, maybe even a special erosion-control mix, and sometimes a light netting to hold everything until it's established. Watering more often but for shorter periods helps too, and you have to be careful not to mow too short or the roots won't hold.
